- Vinification: Mechanical harvesting, soft pressing, static clarification, fermentation in steel tanks at controlled temperature (14°-16°C).
- Ageing: In steel tanks “sur lies” for two months.
- Food pairing: Aperitifs, fish dishes, fresh pasta filata cheeses.
