When the Mediterranean meets the Pacific Umi, which means “sea” in Japanese, tells of the harmonious union between our Mediterranean sun and the versatility of Chardonnay.

A fresh wine of great flavor and harmony, it was born from a passion for sushi combined with the Mediterranean tradition of eating raw fish.

Intense and floral of mimosa on the nose, it has notes of exotic fruit, mango and banana.

Clean and sapid palate, excellent persistence.

    Monteiasi, Montemesola and neighboring areas in the province of Tarant.

  • Altimetry:

    20 meters s.l.m.

  • Processing:

    Mechanical harvesting, soft pressing, static clarification, fermentation in steel tanks at controlled temperature (14°-16°C).

  • Refinement:

    In steel tanks “sur lies” for two months.

  • Food pairing:

    Sushi, sashimi, aperitifs, fish dishes, fresh ricotta, pasta filata cheeses.
